Where it comes from
It originates in Alto Adige, from the vineyards of San Michele Appiano situated at an altitude between 400 and 500 metres. The vines, trained using the Guyot system, maintain a low yield to ensure a high aromatic concentration. Under the guidance of oenologist Hans Terzer, the San Michele Appiano winery enhances the essence of Alto Adige, offering with this label an authentic and refined interpretation of the mountain terroir.
How it is produced
After harvesting in mid-September, the grapes ferment in steel tanks with punching down and pumping over. This is followed by at least twelve months of ageing in wooden barrels, a fundamental step to smooth the tannic texture and achieve a dry extract of thirty grams per litre. It pairs perfectly with flavourful first courses, cheeses and beef or pork. To enjoy it at its best, it is recommended to decant for an hour before serving at the ideal temperature between 14 and 16 degrees.
