What type of wine it is
The Fallwind Sauvignon from San Michele Appiano is a still white wine with the Alto Adige controlled designation of origin (DOC) that enhances the essence of Sauvignon Blanc, with fermentation and ageing in steel. It presents to the eye with a bright light yellow colour enriched by green reflections, releasing a clear aromatic bouquet in which notes of pineapple and elderflower, gooseberry and delicate hints of honey stand out. On the palate, a fresh minerality emerges, defining a balanced and refreshing profile. This taut sip ensures a clean taste profile and a linear persistence, offering an extremely satisfying drink.
Where it comes from
The grapes come from the vineyards of Appiano Monte and the Oltradige area, in South Tyrol, where Sauvignon Blanc has found its ideal home since the 1980s. The rows, situated between 480 and 550 metres in altitude with south-east exposure, take root in gravelly and limestone soils. This particular geological composition accentuates the mineral expression and aromatic clarity of the fruit. The microclimate is constantly cooled by the Fallwind katabatic winds, mountain breezes that ensure a vibrant ripening of the grapes and bestow a marked tension upon the glass.
How it is produced
The vines, Guyot-trained and aged between 10 and 30 years, offer calibrated yields of 60 hl/ha to preserve quality. At the end of September, the manual harvesting of the bunches takes place, which is fundamental to protect the aromatic integrity of the raw material. Fermentation and subsequent ageing on the lees take place entirely in steel tanks until the end of February. This careful production process enhances the freshness of the fruit, ensuring an immediate structural balance and a dynamic drinkability that does not require decanting.
History and curiosities
Introduced to Oltradige in the 1980s, Sauvignon Blanc finds its ultimate expression in the vineyards of San Michele Appiano. The vines grow on gravelly and limestone soils, cooled by the Fallwind downdrafts, which lend the grapes an extraordinary vivacity.
