What kind of wine it is

The Talò Primitivo Merlot Salento is a still red wine from Salento that combines Primitivo and Merlot grapes in a balanced blend. With an intense ruby red colour and garnet reflections, it releases enveloping aromas of cherries, plums, cinnamon and cocoa. On the palate, it offers a medium body, supported by velvety tannins, for a harmonious and persistent finish. At the table, it enhances Mediterranean cuisine, accompanying structured first courses, grilled red meats and mature cheeses, giving its best when served at around sixteen degrees after adequate aeration.

Where it comes from

This wine, produced by San Marzano, originates in the town of the same name in Taranto, on land nestled between the Ionian and Adriatic seas at about one hundred metres above sea level. The hot, dry climate favours the ripening of the grapes, while the proximity to the sea and the Mediterranean scrub ensures optimal ventilation. The soils, characterised by a clayey texture and a good presence of stones, are rather shallow. In this context, alongside espalier-trained vines, historic ungrafted bush vines survive, with ancient Primitivo vines reaching up to eighty years of age, giving the wine an extraordinary aromatic concentration.

How it is produced

Production begins in the first half of September with a careful manual harvest. The grapes undergo temperature-controlled maceration and alcoholic fermentation with selected yeasts for about ten days, in order to extract colour and polyphenols in a measured way. Subsequently, the wine matures for a period of between four and six months in French oak barrels. This ageing phase smooths the structural component and defines the final aromatic profile, resulting in a clean sip with excellent ageing potential.

The Talò Primitivo Merlot Salento IGP originates from the historic San Marzano Cellars, founded in 1962. This cuvée is a true tribute to the families of Apulian winegrowers who, through their tireless work between the Ionian and Adriatic seas, create a red wine of exceptional elegance. The community's dedication is reflected in the restoration of 80-year-old vines, capable of producing grapes with a distinctive aromatic profile. Awarded with excellent scores, this wine enchants with its velvety tannins and perfect taste harmony.

In 1962 19 vine growers from San Marzano, whose families had farmed the land for generations, combined their efforts to establish "Cantine San Marzano".

Through the decades this coooperative has grown significantly, attracting over 1,200 vine growers, using modern and technologically advanced plants and producing elegant wines without forgetting the obligation to the very old Apulian wine tradition.

Nowadays the fusion of time honoured tradition, passion and sensibility with contemporary techniques enables us to produce wines with distinctive varietal and regional characters, marvellously reflecting individual attention, seasonal variation and local terroir.
