What kind of wine it is

San Marzano Talò Fiano Salento is a still white wine made from Fiano grapes, typical of the Salento region. It stands out for its fresh and mineral profile, combining an enveloping softness with a well-defined acidic backbone. On the nose, it offers fragrant floral notes intertwined with hints of fresh exotic fruit. Thanks to ageing in stainless steel, the wine preserves the aromatic purity of the grape variety, delivering an elegant sip with a savoury and pleasant finish.

Where it comes from

The grapes ripen in a hilly area north of Taranto, on shallow clay soils rich in stones, which impart a clear savouriness to the wine. The trellised vineyards benefit from Mediterranean sea breezes, essential for creating a clean aromatic profile. The harvest, carried out in the last week of August, preserves the natural freshness of the grapes, ensuring a lively sip, ideal for elegantly accompanying raw shellfish and seafood starters.

How it is produced

The process begins with cryo-maceration in the press for six to eight hours, followed by gentle pressing to delicately extract the aromatic components. After static cold settling, low-temperature fermentation begins, a key technique for enhancing floral and tropical aromas. The process concludes with a period of rest in steel tanks, which protects the fruit's vibrancy and ensures a clear mineral finish, maintaining great precision on the palate.

History and Curiosities

Founded in 1962, Cantine San Marzano created the Talò line to thank the winegrowers who tend each vineyard with the dedication reserved for a garden. This Fiano Salento IGP originates from the hills north of Taranto, where Mediterranean breezes caress the rows of vines. After harvesting at the end of August, cryo-maceration in the press extracts delicate floral notes and aromas of exotic fruit. Refined in stainless steel, it offers the palate an elegant mineral freshness and enveloping softness, ideal for seafood crudo.

In 1962 19 vine growers from San Marzano, whose families had farmed the land for generations, combined their efforts to establish "Cantine San Marzano".

Through the decades this coooperative has grown significantly, attracting over 1,200 vine growers, using modern and technologically advanced plants and producing elegant wines without forgetting the obligation to the very old Apulian wine tradition.

Nowadays the fusion of time honoured tradition, passion and sensibility with contemporary techniques enables us to produce wines with distinctive varietal and regional characters, marvellously reflecting individual attention, seasonal variation and local terroir.
