What kind of wine it is
San Marzano Il Pumo Primitivo Salento, produced by San Marzano, is a red wine with Protected Geographical Indication from Apulia. This Primitivo displays an intense ruby red colour with violet reflections, accompanied by a bouquet of plum, cherry, rosemary and vanilla. Vinified and matured in steel, it offers a full and smooth body on the palate, with notes of ripe fruit and blackcurrant, ensuring a harmonious finish and excellent drinkability.
Where it comes from
This wine originates in San Marzano, in the Taranto area, between the Ionian Sea and the Adriatic Sea. The vineyards are situated about one hundred metres above sea level and benefit from a warm climate with little rainfall, constantly influenced by the Scirocco winds. The roots delve into red soils of medium clay texture and shallow depth. The combination of a calcareous subsoil, rocky outcrops and abundant stones creates an optimal environment for cultivation. This unique pedoclimatic balance guides the ripening of the grapes, resulting in a concentrated structure in the glass that preserves the typical expressiveness of the region.
How it is produced
The production process overseen by San Marzano begins in September, with the harvest of grapes trained on espalier. In the winery, the must undergoes temperature-controlled maceration followed by about ten days of alcoholic fermentation with selected yeasts. The company prefers maturation in steel, aimed at enhancing the primary aromas without altering the fruity character of the grape variety. To capture every aromatic nuance and best appreciate its rounded profile, it is recommended to decant for one hour and serve the wine at a temperature between sixteen and eighteen degrees.
History and Curiosities
This wine takes its name from the typical Apulian terracotta ornament that adorns traditional balconies, a symbol of prosperity and abundance. The soul of this red wine reflects the expertise of Cantine San Marzano, a cooperative founded in 1962 by the vision of nineteen winegrowers from Taranto. Combining centuries-old roots with innovation, the company has transformed the sixteenth-century farmhouse of Podere Samia into an advanced sustainability laboratory, celebrating with dedication the indissoluble bond with the precious Salento region.
