On the nose, notes of toasted bread and acacia honey emerge, followed by peach, quince, apricot, blackcurrant, blueberry, and hawthorn blossom. The palate offers a rich and fresh attack, developing a clear mineral texture and a persistent finish.
Where it comes from
The roots of this wine lie in Noé les Mallets, in the Côte des Bar. The vines grow on the highest slopes of the Champagne region, a position that gives the grapes pronounced freshness. The estate is managed according to the principles of certified organic viticulture, an approach based on respect for the environment and limiting external interventions. The characteristics of the soils result in a pure varietal expression, essential for ensuring balance and ageing potential.
How it is produced
Production follows the strict process of the Traditional Method, based on secondary fermentation in the bottle for the prise de mousse. Work in the cellar is carried out in harmony with the natural evolution of the must, without forcing. At disgorgement, the Brut Nature style is adopted, excluding the use of dosage syrup. This choice preserves the essence of the grapes, delivering an authentic and clean flavour profile. Ideal paired with shellfish and cheeses, it is best enjoyed when served at an optimal temperature between 6 and 8°C.
