Where it comes from

This Blanc de Blancs originates from the vineyards of Verzy, located in the renowned Champagne region. The terroir, classified as Grand Cru, is distinguished by the presence of chalky soil, which imparts a clear savoury note and great precision on the palate. The vineyard management follows organic and sustainable practices, respecting the natural vocation of the area. The strong territorial identity of these vineyards allows the Chardonnay to express itself with utmost clarity and elegance.

How it is produced

The production process begins with pressing, followed by vinification in ovoid raw concrete tanks. Malolactic fermentation is completed in full, promoting balance in the sip. The total ageing lasts forty-eight months, thirty-four of which are spent in contact with the lees. This rigorous process, in accordance with the principles of the Méthode Champenoise, results in a dry and well-balanced profile, defining its structure and final character.

It all began with Socrates Malot, the founder of Sadi Champagne. As a tribute to his brother Sadi, so called because he was born on the day Sadi Carnot (French president from 1887 to 1894) was assassinated and died during the First World War, he gave his company and his son this historically significant name.

Today, his great-grandson carries on the name and continues to work with his father.
