The aromatic profile reveals expressive notes of white-fleshed fruits, honey and spices, offering a fleshy sip supported by perfect balance on the palate.
Where it comes from
The grapes destined for this Champagne come from a rigorous selection of plots in Villers-Marmery, in the heart of the Montagne de Reims. The Chardonnay used comes from old vines forty-five years of age, capable of giving the must remarkable concentration and a deep definition of fruit. The roots delve into a terroir characterised by distinctive clay-limestone soils, which impart a vibrant tension to the palate. These environmental conditions result in a well-structured wine, where the innate freshness of the grape variety is combined with a pleasant controlled roundness.
How it is produced
The production process aims to enhance the raw material through vinification carried out entirely in large barrels, deliberately avoiding malolactic fermentation to maintain a linear and taut profile. Subsequently, the wine undergoes a long ageing of six or seven years on the lees in the cellar. This patient maturation enriches the complexity of the cuvée, perfectly integrating the aromas. The addition of an Extra Brut dosage ensures a dry and essential finish, concluding the tasting with profound precision.
