Subsequently, the batches are combined in a carefully balanced blend to achieve the final equilibrium. Before bottling at the estate, the wine spends an extended period on the lees of over six months, a technique that enriches its body and imparts a captivating structural roundness.

From this winery
Since the 17th century, the land, the vines and the passion have been passed down from generation to generation. Marine and Gervais, our paternal grandparents, sold the estate's wines in Feuillette (132-litre barrels, typical of Chablis) in Auxerre and Paris.

Roland was the first to bottle the wines in 1979. It was at this point that he gave the estate its name. Joined by Brigitte, our parents then expanded the estate to 20 hectares and developed bottle sales in France and abroad.
