Chablis Premier Cru Vau de Vey is a still white wine from Lavantureux that expresses the authentic character of Burgundy. A pure expression of Chardonnay, this wine stands out for its taut and slender profile, combined with a medium-bodied structure that envelops the palate with great balance. The tasting reveals a marked saline minerality supported by a pronounced acidity, capable of delivering a vertical sip. Where it comes from

Chablis Premier Cru originates in Burgundy, along the steep slopes of the Vau de Vey valley, between the communes of Chablis and Beine. The vines sink their roots into a unique soil composed of Kimmeridgian marl, a calcareous and clay-rich earth full of fossilised shells that defines the character of the terroir. Due to the steep incline, viticulture requires meticulous manual interventions to ensure the care of the plants. The interaction between the microclimate and deep roots gives the Chardonnay its unmistakable vertical and dry expression, centred on a vibrant persistence.

How it is produced

After manual harvesting, fermentation takes place in stainless steel tanks at a controlled temperature, a fundamental technique to preserve the finesse of the aromas. Maturation lasts between twelve and fifteen months: part of the batch remains in steel to enhance the fruit, while the other part rests in oak barrels of varying ages to enrich the structure. A six-month rest on the lees precedes the final blend, creating an aromatic synergy of great elegance, also ideal for a vegan diet.

From this winery
Since the 17th century, the land, the vines and the passion have been passed down from generation to generation. Marine and Gervais, our paternal grandparents, sold the estate's wines in Feuillette (132-litre barrels, typical of Chablis) in Auxerre and Paris.

Roland was the first to bottle the wines in 1979. It was at this point that he gave the estate its name. Joined by Brigitte, our parents then expanded the estate to 20 hectares and developed bottle sales in France and abroad.
