Description

What type of wine it is

Nuits St Georges Vieilles Vignes from Domaine Chevillon is a still red wine of remarkable elegance and typicity. Produced in the heart of Burgundy, it best expresses the purity and character of the Nuits-Saint-Georges appellation. In the glass, it presents a classic ruby red colour, offering a clear olfactory profile where aromas of red fruits such as strawberry, cherry and raspberry stand out, accompanied by pleasant hints of undergrowth. On the palate, it reveals a soft and round texture, ensuring a balanced, structured sip with a deeply authentic gustatory charm.

Where it comes from

This wine originates from the renowned commune of Nuits-Saint-Georges, located within the prestigious region of Burgundy, France. The territory is historically famous for its specific environmental conditions, which allow for optimal grape ripening and impart great depth to the local wines. The main and most precious characteristic of this specific provenance is represented by the historic old vines, an exceptional agricultural heritage featuring plants over forty years old. This mature ecosystem, deeply rooted in the soil, ensures naturally low yields of the highest quality, resulting in a territorial fidelity of inestimable oenological value.

How it is produced

The production of this red wine relies on rigorous artisanal methods, carefully applied during both agricultural practices and the entire oenological process. The work in the cellar aims to enhance the exceptional aromatic concentration offered by the historic vines over forty years old, guiding the grapes through a careful fermentation that respects the raw material. The subsequent ageing phase consolidates the wine's natural roundness, allowing the tannins to soften and the aromas to blend in total harmony. To allow this red to best express all its complexity, decanting for about an hour before serving is recommended, thus ensuring a fully balanced flavour profile.

From this winery
The Domain Chevillon is the tale of men and women who have been developing the Domain through their own work since the 1900s.

The adventure started with Symphorien Chevillon who started working approximately thirty acres of vines at Nuits-Saint-Georges in his own name. Then, Eugène-François (around 1914), following 2 years of military service and 5 years of war, took over the domain and bought a few plots as Premier Cru. Then, Eugène-François (around 1914), following 2 years of military service and 5 years of war, took over the domain and bought a few plots as Premier Cru. In 1946, the vines were taken over by the 2 sons (they separated later on). Maurice bought 2 stills (39) and (46) and became an itinerant distiller. He continued to expand the Domain by buying new plots of Premier Cru. In 1937, his wife Adrienne gave birth to 2 children: Jeannine and Robert.

In 1961, Robert married Christiane. They had 2 sons: Denis, born in 1963, and Bertrand, born in 1967. In 1990, Denis and Bertrand, together with their father, Robert, set up a partnership to create their own SCEV.
Denis and Bertrand now manage the Domain, following Robert's retirement in 2003. The finesse and complexity of their wines are appreciated throughout the world: mainly in England and the United States, but also in Australia, South Africa, Japan, China and other countries that are opening up to the knowledge and "pleasure of wine enjoyment".

Our domain has been "historically" deeply attached to growing vines for 4 generations. We have the privilege of working a world-renowned terroir. Our expertise has its roots in tradition, but is also inspired by modern methods, pushing us naturally towards creating fine wines. The domain covers an area of 13 hectares of vines, mostly red Premier Crus (8). Guyot pruning is used. The final result is structured, fruity, elegant, fine and complex wines, made to be kept. Our Creed: to make you discover and appreciate our wines in all circumstances.
