Champagne 1er Cru Terres Froides Extra Brut by R. Pouillon is a refined white wine made from Chardonnay grapes. Produced using the Traditional Method, this Champagne stands out for its Extra Brut dosage, which enhances a distinctly dry flavour profile. In the glass, it reveals a marked freshness and a bouquet of clear fruity notes, blended with delicate hints of bread crust. On the palate, a vibrant chalky salinity emerges, making it ideal for elegantly accompanying dishes based on lean fish, sushi and shellfish.

Where it comes from

This wine originates from the renowned Montagne de Reims, from a vineyard over forty years old. The plot, situated at around 165 metres above sea level, benefits from a northern exposure that favours a cool microclimate. The roots delve into clay-limestone soils rich in chalk, which define the mineral texture of the sip. This particular terroir gives the Champagne a pure drinkability and a persistent finish. The Premier Cru classification attests to the high quality of these vines, guaranteeing great expressive precision.

How it is produced

The vinification of the Chardonnay begins thanks to the action of indigenous yeasts. The fermentation of the base wine takes place in different containers, combining the use of French oak barrels, ceramic amphorae and egg-shaped concrete vats. The subsequent prise de mousse follows the principles of the Traditional Method. Maturation on the lees for 36 months imparts structure and aromatic complexity. After disgorgement, a rest in the cellar for between six and twelve months ensures the achievement of optimal flavour balance.

History and Curiosities

Since 1947, the R. Pouillon family has safeguarded this secret cuvée, born on the edge of the forest on the Montagne de Reims. The name Terres Froides refers to the cold northern exposure of the plot, where old Chardonnay vines sink their roots into clay-limestone soils. Fermented with indigenous yeasts in French oak, ceramic amphorae and concrete vats, this Traditional Method matures for 36 months on the lees. The result is an Extra Brut with vibrant freshness and profound chalky minerality, ideal for elegantly enhancing your table.

In 1947, Roger Poullin, who had been selling his grapes to negociant, decided to make his own Champagne from a small parcel he owned in the village of Muntigny. With the help of Louis Baulant (his uncle and a famous oenologue) he discovered the art of vinification. As his passion grew through the years, he decided to create and sell his own brand.

In 1964, James (Roger and Bernadette's only child) started working with his father while developing his knowledge as a winemaker. He was joined a year later by his wife, Josette, born in Champagne as well.
As Recoltant-Manipultant, the Poullons own their own press and do not work in a coop. The control every step of the process, from the vine to the bottle.

After the death of Roger Poullon in 1993, and his spouse 2 years later, Fabrice (James's yougest son) joins the family business and bring with him his background in viticulture, oenology and marketing. His wife Elodie follow in 2000 to help on the marketing side.

As a young winemaker, James modernized the operation with the use of enamelled vats, hydraulic tractors and gyropaletts. Later, Fabrice introduced sustainable agriculture and started to export Roger Pouillon Champagne to the US, Japan, United Arab Emirates, Italy, Belgium, Canada, Australia and UK.
