The process begins by using only Chardonnay to obtain a clear and defined base. The prise de mousse takes place through a slow second fermentation, an essential step in creating an elegant and persistent mousse. The entire ageing process is carefully managed to preserve the natural citrus notes and lively freshness, ensuring a perfectly smooth taste on the finish.
