This precious parcel enjoys a unique geology that combines the characteristics of the Tortonian soil with those of the Serravallian terrain. How it is produced
Production begins with gentle pressing and partial destemming, to optimise extraction during skin contact. Maceration takes place in temperature-controlled steel tanks for about seven days, while malolactic fermentation is completed by the end of winter. Ageing involves a period of eighteen months in French oak barrels, followed by two years in steel. The production cycle concludes with a prolonged refinement in glass, necessary to achieve perfect taste balance before release to the market.
