How it is produced
After harvesting, the grapes are crushed and destemmed. The vinification process includes a maceration on the skins for about seven days at a controlled temperature, encouraging the extraction of colour and structure. Malolactic fermentation finishes before winter, harmonising the flavour. Maturation involves twelve months of ageing in barrels, followed by a further four months of rest to complete the production cycle.
