What kind of wine is it
Zero Infinito by Pojer e Sandri is an organic sparkling white wine, an authentic expression of Trentino-Alto Adige. Made from Solaris grapes, a resilient variety, it offers a refreshing and genuine drink. On the nose, it reveals aromas of elderflower, apple and lively tropical notes. On the palate, it is dry, fresh and savoury, with a subtle umami sensation due to prolonged contact with the lees. It proves to be the ideal companion for platters of cured meats, fresh cheeses and shellfish dishes.
Where does it come from
The grapes come from Maso Rella, located in the upper Val di Cembra at an altitude between 800 and 900 metres. The vines grow on very steep slopes facing south-west, with roots delving into volcanic soils composed of disintegrated dark porphyry. The microclimate benefits from the cool morning breezes from the Fiemme and Fassa valleys, followed by the mild Ora del Garda in the afternoon. This constant ventilation ensures optimal development of the bunches and gives the wine a vibrant acidity.
How is it produced
Pojer e Sandri adopts a rigorous approach, free from exogenous interventions or filtration. The must undergoes refermentation in the bottle thanks to indigenous yeasts, following the Ancestral Method. The absence of disgorgement keeps the lees suspended at the bottom, giving a characteristic natural haze, while the pas dosé style enhances the purity of the original fruit. By gently shaking the sediment before serving, a denser, more textured and distinctly persistent taste is achieved.

Faedo 1998: We are already starting to show our thirst for innovation: we are among the first at a national level to market Chardonnay, which until then was practically unknown.
Faedo 2002: We patent the reduction and press vinification with nitrogen recovery, which drastically reduces the use of sulphites. We then begin to wash the grapes through the grape jacuzzi.
The arrival of Marianna, Matteo, Fiamma, Elisa and Federico has brought further life and energy to this dream in which passion and innovation are the keystone.
