Description
What kind of wine it is
Pojer e Sandri Sauvignon is a still white wine that precisely expresses the character of Trentino, within the Vigneti delle Dolomiti denomination. Made exclusively from Sauvignon grapes, it stands out for its fresh and vibrant style, offering a clear and defined varietal profile. On the palate, it reveals a silky texture and a measured touch of wood, ensuring long persistence and excellent balance between taste and aroma. This wine is ideal as an aperitif or to accompany delicate dishes, shellfish and fish-based preparations.
Where it comes from
The grapes come from the hilly areas of the province of Trento, specifically from the localities of Palai, Frait and Valbona. The vineyards, located at various altitudes, benefit from optimal exposures that favour perfect ripening of the bunches. In the municipality of Faedo, the roots sink into silty-limestone soils, enriched with volcanic rocks, marl and dolomite. In the Valbona area, sandy soils of porphyritic origin prevail, rich in stones and pebbles. The vines are cultivated using the open Trentino pergola system, a technique that ensures the correct vegetative balance and full aromatic expression.
How it is produced
Production follows a strict white vinification process to protect the must from oxidation. After washing the grapes, pressing takes place in a controlled atmosphere, allowing the avoidance of exogenous antioxidants. Fermentation with natural yeasts preserves the fruit's identity. In the glass, it displays a bright straw yellow with greenish highlights. The varietal aromatic profile is intense, characterised by elderflower, tomato leaf and fig. The sip is enriched with elegant fruity nuances of peach, apricot and blackcurrant, delivering an impeccable correspondence between nose and palate.
History and Curiosities
Founded in Faedo in 1975, Pojer e Sandri has turned the dream of two young men into a reality of excellence. This Sauvignon embodies that vision through an innovative white vinification. With the washing of the grapes and pressing in a controlled atmosphere, the winery applies a patented method in total absence of oxygen, avoiding the use of exogenous antioxidants and employing selected natural yeasts to enhance the varietal aromas and the purity of the grape.

Faedo 1998: We are already starting to show our thirst for innovation: we are among the first at a national level to market Chardonnay, which until then was practically unknown.
Faedo 2002: We patent the reduction and press vinification with nitrogen recovery, which drastically reduces the use of sulphites. We then begin to wash the grapes through the grape jacuzzi.
The arrival of Marianna, Matteo, Fiamma, Elisa and Federico has brought further life and energy to this dream in which passion and innovation are the keystone.
Faedo 2013: The Zero Infinito project is born: Zero chemical treatments in the countryside, Zero sulphur dioxide, Zero commercial yeasts, Zero clarifying agents, Zero filtrations, Zero antioxidants. Read more
