The Molinar Extra Brut by Pojer e Sandri is a high-quality rosé sparkling wine made using the Traditional Method in Trentino-Alto Adige, produced from Pinot Meunier grapes. In the glass, it reveals a powder-pink colour and aromas of small red fruits, while on the palate it expresses great character, proving dry, savoury, and persistent. This elegant zero-dosage sparkling wine is ideal throughout the meal, perfectly accompanying starters, shellfish, white meats, and vegetarian dishes.
Where it comes from
The grapes are grown in Trentino-Alto Adige, in the Molini area, situated between San Michele all’Adige and Faedo. The vineyards are located at an altitude of 550 metres, with a favourable north-west exposure. The distinctive feature of the terroir lies in its marine sedimentary soil from the Werfen layers, characterised by a silty-sandy matrix. This soil rests on a limestone conglomerate of sandstone, marl, and dolomite. The rich mineral component of the land and the altitude define the wine's aromatic profile, giving it a distinct savoury tension.
How it is produced
The winemaking process begins with the manual harvesting of the bunches, which are promptly cooled in a cold room and carefully washed. After a short maceration, pressing takes place in a controlled atmosphere to protect the integrity of the fruit and fix its colour. The first fermentation takes place in small barrels, placed on special rotating supports to apply the 'hourglass' technique, rotating them weekly to maximise contact with the lees. With the arrival of spring, the wine undergoes its second fermentation in the bottle as per the Traditional Method, resting on the lees for thirty-six months. The process ends with zero-dosage disgorgement, yielding a pure and unaltered glass of wine.

Faedo 1998: We are already starting to show our thirst for innovation: we are among the first at a national level to market Chardonnay, which until then was practically unknown.
Faedo 2002: We patent the reduction and press vinification with nitrogen recovery, which drastically reduces the use of sulphites. We then begin to wash the grapes through the grape jacuzzi.
The arrival of Marianna, Matteo, Fiamma, Elisa and Federico has brought further life and energy to this dream in which passion and innovation are the keystone.
