What kind of wine is it
Carbonaione is a still red wine that precisely expresses the characteristics of Sangiovese, cultivated organically. Produced in the area of the Upper Greve Valley, it appears in the glass with a deep ruby colour. On the nose, it reveals clear scents of wild berries and cherry, accompanied by notes of violet, earth, and pipe tobacco, with hints of graphite and leather. On the palate, it displays an elegant structure, supported by noble tannins and well-integrated freshness. The sip unfolds harmoniously, finishing with a long finale marked by a pronounced mineral character and demonstrating excellent ageing potential.
Where does it come from
This red originates in Ruffoli, in the municipality of Greve in Chianti. The grapes come from the historic Carbonaione vineyard, where old vines ensure a yield of remarkable concentration. The rows stretch at 450 metres above sea level, benefiting from a west and south-west exposure that favours steady and gradual ripening. The sandy-silty soil, rich in stones, ensures excellent natural drainage. This soil composition is directly reflected in the wine's organoleptic profile, imparting the typical mineral character and preserving the aromatic definition of the grapes.
How is it produced
The harvest takes place in the first half of October. In the winery, Poggio Scalette carries out fermentation in steel tanks for twelve days, aiming for a balanced extraction of structural and colour components. The wine then matures for fourteen months in barrels, a crucial stage that consolidates its tannic profile without altering the grape variety's expressiveness. The process concludes with bottle ageing for at least six months. To fully appreciate its qualities, it is recommended to decant for one hour and serve at a temperature between 16 and 18 degrees Celsius.
