What kind of wine it is
Allemanda Planeta is a dry organic white wine that embodies the authentic essence of Moscato di Noto. Produced from Moscato Bianco grapes, it stands out for its fresh and savoury aromatic profile, supported by an agile and elegant structure. On the nose, it reveals a pleasant floral and fruity interplay with hints of jasmine, orange blossom, rose petals, white peach and pink grapefruit, enriched by distinct marine notes. Its lively taste makes it perfect for accompanying seafood specialities, such as sushi and raw fish, as well as oriental cuisine and Sicilian cheeses like tuma and vastedda, for a balanced and engaging drinking experience.
Where it comes from
This wine comes from the Planeta Buonivini estate, located in the renowned Noto area in the province of Syracuse. The vineyards, situated at around forty metres above sea level, are cultivated according to the principles of organic farming. The vines are trained using the Guyot system on distinctly calcareous soils, with a fine texture, rich in stones and streaked with gypsum. This specific soil composition gives the wine a pronounced mineral character and a dry and precise expression, faithfully reflecting the pedoclimatic identity of the Sicilian territory.
How it is produced
The production process begins in August with manual harvesting and meticulous selection of the grape bunches. In the winery, after destemming and gentle pressing, the must is clarified by static decantation before fermentation begins in stainless steel tanks. The fermentation process lasts between fifteen and twenty-five days at a controlled temperature. Afterwards, the wine matures for several months, still in steel, in contact with the fine lees, benefiting from weekly bâtonnage. This technique enhances its complexity and aromatic texture before the wine is prepared for bottling.
