On the palate, it reveals a distinct savouriness, harmonised by a pleasant freshness and intense fruity hints. The finish is persistent, with nuances of rosemary and saline mineral tones, perfect for pairing with raw seafood or stretched-curd cheeses.
Where it comes from
This white originates in Montelaguardia, near Castiglione di Sicilia. The vineyards grow at high altitude, surrounded by woods and lava flows, on deep volcanic soils made up of black sands rich in minerals. This unique geology, combined with strong temperature variations, allows for a slow and steady ripening of the grapes. These pedoclimatic conditions enhance the mineral expression of the grape variety, while preserving its aromatic freshness and vibrant acidic tension.
How it is produced
Production follows the principles of organic farming. The grapes, harvested by hand, are chilled and gently pressed. Fermentation takes place in both steel tanks and oak barrels, preserving the integrity of the organoleptic profile. The wine then matures on fine lees through regular bâtonnage, enriching its structure. The final ageing gives a rounded sip with excellent taste balance, capable of enhancing the natural vitality of the fruit.
