What kind of wine it is

Didacus Chardonnay Planeta is an organic white wine that elegantly interprets the character of the Menfi region in Sicily. The Chardonnay displays an intense and profound aromatic profile, characterised by toasted notes and hints of melted butter, accompanied by sweet nuances of wildflower honey, nectarine and golden apple. As it evolves in the glass, it reveals fascinating mineral tones of gunpowder, aromatic herbs and white pepper. On the palate, it is soft and enveloping, supported by a full structure that gives the sip a refined persistence.

Where it comes from

This wine comes from the lands of Sambuca di Sicilia, within the renowned Ulmo vineyard. The vines are grown at an altitude of 250 metres, using a trellis training system and Guyot pruning. The soil, composed mainly of clay with silt and sand sediments, is fundamental in defining the wine’s mineral texture and roundness. The Planeta winery operates under organic farming and adheres to the SOStain sustainability protocol, adopting practices that respect the balance of the ecosystem.

How it is produced

Vinification begins with gentle pressing and a brief cold maceration, followed by static decantation of the must. Once fermentation has started, the liquid is transferred to wood where it completes the process. The wine undergoes partial malolactic fermentation, acquiring a pleasant softness. Ageing continues for ten months in barrels, with constant bâtonnage to keep the lees in suspension, ensuring greater complexity and volume in the final product.
