The roots delve into clay-limestone soils, a key factor in giving the structure a pronounced and deep tannic texture. How it is produced
Work in the winery begins with careful vinification carried out in horizontal fermenters. This is followed by temperature-controlled fermentation for a period of twelve to fifteen days, a crucial timeframe to allow for the correct extraction of the phenolic profile. The process is completed with a long twenty-four month maturation in wooden barrels.
