Description
What kind of wine it is
Pinot-Chevauchet Champagne Blanc de Noirs Extra Brut Vieilles Vignes is a refined Traditional Method sparkling wine made from Pinot Meunier grapes. In the glass, this Champagne displays a golden straw-yellow colour and a fine, lively, and very persistent perlage. On the nose, it reveals a fresh and inviting profile, where notes of white and dried fruit meet a pronounced minerality. On the palate, it impresses with its balance between energy and softness, with delicate hints of white flowers and fruit. The tasting experience culminates in a mineral and saline finish, making this Blanc de Noirs an ideal companion for raw seafood, shellfish, and goat's cheese.
Where it comes from
This wine originates from old vines cultivated in the villages of Moussy and Pierry Premier Cru, located on the southern slopes of Épernay. The estate's management reflects the approach of Pinot-Chevauchet, an independent producer who works exclusively with their own grapes. The soils in this corner of Champagne are characterised by chalky-clay soils rich in flint, which impart a savoury character and extreme aromatic purity to the grapes. The agricultural management follows the principles of organic viticulture, protecting the environment to achieve a genuine expression of the terroir.
How it is produced
Production is based on the Traditional Method, with the classic secondary fermentation in the bottle. The Pinot Meunier is vinified in oak barrels, a fundamental step to give the wine structure and precision. This is followed by 36 months of ageing on the lees, essential for defining the texture of the perlage and enriching the bouquet without compromising the natural freshness. The low Extra Brut dosage highlights the verticality and dry character of the label, whose production is strictly limited.
History and Curiosities
An independent winemaker for four generations, the Pinot-Chevauchet house honours tradition by vinifying exclusively estate-grown grapes. This captivating Champagne is born from a careful selection of grapes from old Pinot Meunier vines, lovingly cultivated on the chalky-clay soils of Moussy and Pierry Premier Cru. The artisanal dedication is reflected in a limited production of 2,500 bottles, obtained from a single harvest of the three oldest plots. An authentic expression of the terroir, masterfully aged for 36 months on the lees.
