Where it comes from
This wine is produced in Sicily, on the northern slope of the volcano, in the locality of Solicchiata in Castiglione di Sicilia. The vines grow at an altitude of 600 metres above sea level, trained as bush vines and on trellises on a sandy loam soil with an abundant presence of stones, a decisive factor for the expressive clarity of the grape variety. This volcanic matrix clearly defines the wine's identity, reflecting the peculiarities of the renowned districts of Etna.
How it is produced
Production begins in the second decade of October with the manual harvesting of the bunches. In the winery, there is an eighteen-day maceration on the skins, followed by gentle pressing and natural malolactic fermentation. The wine then matures for three months in fine-grained French oak barrels with light toasting, a stage aimed at integrating the structural texture. To best appreciate it, it is recommended to decant for an hour before serving at 16-18 °C, ideal paired with flavourful first courses, pork and mature cheeses.
