The Champagne Pierre Paillard Grand Cru Pinot Noir Les Maillerettes Bouzy Extra Brut is an outstanding Blanc de Noirs made from Pinot Noir grapes. The sparkling process is carried out using the Traditional Method, ensuring a solid structure and superior qualitative depth. Visually, it shines with a straw yellow hue, enlivened by a fine and creamy perlage. On the palate, it is vibrant, taut and savoury, with aromas of wild strawberry, currant and delicate hints of bread crust. It is a gastronomic and versatile wine, able to enhance fish dishes, white meats and cheeses with balance.

Where it comes from

This cuvée is born from the single vineyard Les Maillerettes in Bouzy, a renowned Grand Cru located in the Montagne de Reims. The character of the plot comes from old Pinot Noir vines over forty years old, which ensure a defined aromatic concentration. The subsoil, strongly characterised by chalk, gives the Champagne a pronounced mineral imprint and a persistent saline trail. The careful selection of grapes reflects the authentic identity of the terroir, further enhanced by farming practices that comply with organic certification standards.

How it is produced

The vinification process involves an initial stage where the base wine spends 10 months in oak barrels, giving solidity to the flavour profile. This is followed by a long ageing on the lees for 48 months in cool underground cellars, enriching the sensory profile with elegant tertiary aromas. The dosage of 3 g/l defines the clarity of the Extra Brut style, allowing a long finish to emerge where notes of lemon, brown butter and caramel blend perfectly. This meticulous technique results in a complex wine, ideal for accompanying an entire meal.
