Crafted using the Traditional Method, it is made exclusively from Chardonnay grapes sourced from historic plots. In the glass, it displays a brilliant golden yellow hue, enhanced by a fine and persistent perlage. On the palate, it offers a fresh, long and well-defined sip, with an aromatic profile that combines fruity notes with fragrant pastry nuances, resulting in a clean and perfectly balanced tasting experience.

Where it comes from

This cuvée originates from the single parcel Les Mottelettes in Bouzy, in the Montagne de Reims. The area is characterised by deep chalky soils, essential for imparting finesse and precision. The cool climate encourages slow ripening, enhancing the tension and aromatic purity typical of Chardonnay. The vines, classified as old vines, belong to the historic 1961 planting. Their advanced age ensures low yields of the highest quality, promoting remarkable flavour concentration and a profound sense of place.

How it is produced

Production aims for maximum purity, following organic and sustainable agricultural practices. The secondary fermentation takes place according to the Traditional Method, followed by forty-eight months of ageing on the lees in chalk cellars. The Extra Brut dosage preserves the wine's clarity and vibrancy. With an ageing potential of up to fifteen years, this Champagne is perfect served at 6-8 °C, ideally accompanying starters, cheeses and refined white fish dishes.
