The cool climate encourages slow ripening, enhancing the tension and aromatic purity typical of Chardonnay. The vines, classified as old vines, belong to the historic 1961 planting. Their advanced age ensures low yields of the highest quality, promoting remarkable flavour concentration and a profound sense of place.
How it is produced
Production aims for maximum purity, following organic and sustainable agricultural practices. The secondary fermentation takes place according to the Traditional Method, followed by forty-eight months of ageing on the lees in chalk cellars. The Extra Brut dosage preserves the wine's clarity and vibrancy. With an ageing potential of up to fifteen years, this Champagne is perfect served at 6-8 °C, ideally accompanying starters, cheeses and refined white fish dishes.
