Pierre Paillard Champagne Grand Cru Ambonnay Vieilles Vignes Blanc de Noirs Extra Brut is produced using the Traditional Method. Made exclusively from Pinot Noir grapes, this Blanc de Noirs displays a golden yellow colour, characterised by a fine and continuous perlage. On the nose, it releases clear aromas of red fruits elegantly intertwined with yeasty notes. On the palate, the choice of Extra Brut dosage ensures a dry and lively sip, capable of balancing a significant structure with an enveloping and persistent freshness.

Where it comes from

This Champagne originates from Ambonnay, a renowned village classified as Grand Cru located in the Montagne de Reims. The use of grapes from old vines cultivated organically gives remarkable depth and intensity to the raw material. Pierre Paillard, as an independent producer, personally oversees every stage of production in his own vineyards. The estate is now managed by brothers Antoine and Quentin Paillard, who boast solid viticultural experience also rooted in the nearby area of Bouzy.

How it is produced

Vinification involves an initial maturation of ten months in barrels in contact with the lees, a key stage that brings breadth and roundness to the wine. The subsequent secondary fermentation in bottle includes ageing for forty-eight months, essential for defining the finesse of the perlage and the complexity of the aromas. The result is a structured and characterful glass, ideal for harmoniously accompanying refined starters, white fish dishes and cheese selections.
