Made exclusively from Pinot Meunier grapes grown on old vines, this wine stands out for its fine and persistent perlage, the result of meticulous craftsmanship according to the Traditional Method. On the nose, it reveals a clear aromatic layering that combines notes of red fruits with fragrant hints of yeast. This wine originates from the area of Taissy, a renowned commune classified as Premier Cru. The Pierre Paillard estate, located in Bouzy, manages these vineyards following a strict organic and sustainable approach, focusing on the authentic expression of each individual plot.

How it is produced

The Pinot Meunier grapes are vinified to obtain a base wine that matures for ten months in wooden barrels. In full compliance with the rules of the Traditional Method, the subsequent ageing on the lees lasts for forty-eight months within the estate’s deep chalk cellars. This long maturation enhances the structure of the Champagne, resulting in a bright straw-yellow colour and enriching its organoleptic profile. The restrained dosage keeps the sip focused on freshness and persistence, ensuring a harmonious, dry, and crisp finish.
