Description

What kind of wine is it

Chermette Crémant de Bourgogne Blanc de Blancs Brut is a dry sparkling wine produced by Domaines Chermette. Created to enhance Chardonnay, this wine comes to life through the Traditional Method with a slow secondary fermentation. In the glass, it displays a pale gold colour, animated by a fine and persistent perlage. The bouquet reveals clear aromas of flowers, white fruits and pronounced mineral notes. On the palate, it is taut, offering a fresh and precise sip that finishes with an elegant and vibrant citrusy finale.

Where does it come from

The grapes come from Saint-Vérand, in the picturesque region of Burgundy. The vineyards, trained using the Guyot system and with an average age of around twenty-five years, are rooted in limestone-clay soils rich in minerals. This specific soil composition gives a distinctive character to the development of the vines and is directly reflected in the glass with a clear mineral expression and a marked verticality, fully reflecting the sharp style of Crémant de Bourgogne.

How is it produced

The grapes are hand-harvested in small crates to allow the juice to drain and to avoid oxidation. After direct pressing, slow fermentation takes place in stainless steel at a controlled temperature. The winery creates a blend of different vintages to maintain consistently expressive quality. The prise de mousse follows the Traditional Method, with ageing on the lees for about eighteen months and a low final sugar dosage. Thanks to its natural liveliness, this sparkling wine excels alongside shellfish and seafood, pairing impeccably with seafood-based first courses and delicate sautés.

History and Curiosities

Originating from Saint-Vérand, the Crémant de Bourgogne AOC from Domaines Chermette highlights the elegance of pure Chardonnay. The manual harvest in perforated crates prevents oxidation, preserving the integrity and freshness of the grapes. The blending of three different vintages ensures a perfect and consistent balance over time. The slow maturation according to the traditional method and ageing on the lees enhance this Blanc de Blancs Brut, giving it a persistent perlage and vibrant citrus notes.
