Where does it come from

How is it produced
The grapes are hand-harvested in small crates to allow the juice to drain and to avoid oxidation. After direct pressing, slow fermentation takes place in stainless steel at a controlled temperature. The prise de mousse follows the Traditional Method, with ageing on the lees for about eighteen months and a low final sugar dosage.
