Pfitscher presents the Mathias Sauvignon Blanc Riserva, an elegant white wine from Alto Adige that clearly expresses the identity of its region. In the glass, it displays a straw yellow hue, offering the nose captivating mineral notes of flint combined with an extremely clear fruity profile. On the palate, it delivers a sip of great depth, revealing a precise structure that finishes with a decisive and remarkably persistent aftertaste.
Where it comes from
Sauvignon Blanc has its roots in the enchanting wine-growing landscapes of Alto Adige, in the Montagna area. The vineyards grow at an altitude of 900 metres, a height that ensures the ideal temperature range for the aromatic development of the grapes. The vines are planted in soils composed of grey porphyry and calcareous sandy rock. This specific geological composition imparts the wine with its distinctive mineral drive, shaping a taut, pleasantly dry and highly characterful flavour profile.
How it is produced
The production process begins with a six-hour maceration before pressing, followed by fermentation at a controlled temperature. This takes place partly in small oak barrels and partly in steel vats, in search of a perfect aromatic balance. The wine then matures through a slow sixteen-month ageing on the lees within the same barrels. To enhance its qualities, it is recommended to serve at 12-14 °C, pairing it with seafood dishes, risottos, white meats or cheese selections.
