Perillo's Taurasi is a still red wine that embodies the deepest expression of the Aglianico grape grown in Campania. In the glass, it presents an intense ruby red hue, anticipating an olfactory profile characterised by clear hints of wild berries and delicate touches of oriental spices. Aged in wood and unfiltered, it reveals a full, warm, and enveloping character on the palate, supported by a solid tannic structure that ensures remarkable longevity. To fully appreciate its structure, decanting for about two hours is recommended, making it ideal for pairing with roast pork, red meats, and aged cheeses, providing a persistent finish.

Origin

This wine originates in the Taurasi territory, specifically in the Calore Valley area, between the municipalities of Castelfranci and Montemarano. The vineyards tended by Perillo are located at high altitudes, benefitting from a microclimate that favours late and steady ripening. The roots run deep into clay soil, an element that imparts depth and a firm structure to the tasting. The presence of historic ungrafted vines, belonging to the local Coda di Cavallo clone, offers an authentic interpretation of the terroir, further confirmed by the excellent score awarded by critic James Suckling.

How it is produced

The winemaking process aims to preserve the natural grandeur of Aglianico, enhancing its aromatic integrity. After a careful harvest and subsequent fermentation, the wine undergoes a patient maturation period within wooden barrels. This step allows the tannins to be smoothed and the powerful taste architecture to be consolidated. To keep the expressive substance intact, the production cycle concludes with bottling without filtration.
