Description
What kind of wine is it
Penfolds Bin 389 Cabernet Shiraz is a still, dry red wine, created from a blend of Cabernet Sauvignon and Shiraz. In the glass, it displays a bright garnet colour that hints at a deep aromatic and flavour profile. On the palate, it reveals a full body and a solid structure, able to balance the richness of the fruit with the contribution of the wood. The sip is distinctly savoury, enriched by a persistent, earthy finish with notes of liquorice root and anise. Thanks to its perfect balance, this Australian red wine boasts remarkable ageing potential.
Where does it come from
The grapes are sourced from the most renowned wine districts of South Australia, including the areas of Barossa Valley, McLaren Vale and Coonawarra. This careful territorial selection defines the broad and layered flavour profile typical of Penfolds. First created in 1960 by Max Schubert in the historic Magill cellars, the wine takes its name from its original storage compartment. Today, it is famous worldwide as Baby Grange, as it matures in barrels previously used for the prestigious Grange.
How is it produced
The production process involves an initial fermentation in stainless steel tanks, completed directly in wood. The wine then matures for twelve months in American oak barrels, ensuring excellent aromatic integration. The bouquet is particularly complex, blending notes of red fruits with hints of soy, sesame, chocolate, smoke, vanilla and dried shiitake mushrooms. On the palate, it offers a powerful and rich sip, with well-balanced toasted and spicy nuances. Due to its significant structure, it is the ideal companion for grilled red meats and mature hard cheeses.
History and Curiosities
Created by Max Schubert in 1960, this iconic red is renowned worldwide as Baby Grange, as it is matured in the same American oak barrels used for the previous vintage of Grange. The name pays tribute to the original storage compartment of the historic Magill cellars. Combining the robust structure of Cabernet Sauvignon with the fruity richness of Shiraz, Penfolds Bin 389 offers consistently high quality and a formidable ageing potential, establishing itself as the masterpiece that forged the prestige of the Australian estate.

In 1844 Dr Penfold and his wife Mary purchased the Mackgill estate, "comprising 500 acres of the choicest land." By all accounts it was Mary Penfold who was responsible for the management and early winemaking responsibilities of the fledgling wine estate. Initially the wines - made from grenache – were prescribed as tonic wines for anaemic patients and the famous Penfolds slogan ‘1844 to evermore’ harks back to its origins as a prescribed tonic.
The 1990s was a period of intense winemaking trials. The ‘White Grange’ project saw the release of Penfolds Yattarna Chardonnay. The barrage of media attention was extraordinary, illustrating Australia’s national interest in the Penfolds brand. Red wine trials resulted in the release of Penfolds’ first Barossa shiraz, RWT (Red Winemaking Trial).
In 2002 veteran oenologist Peter Gago became Chief Winemaker and since that time Penfolds has reached into every major wine market in the world. The strength of Penfolds is that the wine comes first. Penfolds’ range of table wines is utterly Australian, evoking a generosity of spirit and the beauty of the Australian landscape Read more
