On the nose, it offers intense aromas of flowers and white-fleshed fruit, interwoven with clear mineral notes. On the palate, it is dry and slightly enveloping, driven by a pronounced acidity that extends its savoury finish. Its innate smoothness makes it ideal as an aperitif and perfect paired with starters and fish dishes or shellfish.

Where it comes from

This wine originates in Trentino Alto Adige, among the peaks of the Dolomites, in the heart of the Trento region. The mountain climate is essential for the optimal ripening of Chardonnay, ensuring a sip with well-defined tension and minerality. Pedrotti, a family-run business founded at the beginning of the twentieth century, is dedicated to creating mountain bubbles through careful, small-scale production, faithfully capturing in the glass the essence of its Alpine environment.

How it is produced

The process follows the strict rules of the Traditional Method, with a slow secondary fermentation in the bottle. The crucial ageing on the lees for a period of 30-32 months enriches the aromatic spectrum and smooths the texture, resulting in a dry and linear Brut. The balance between the various elements of its composition also ensures excellent ageing potential, allowing this wine to rest and mature further in the cellar for up to ten years.

A historic brand of Trentino oenology. In 1928 the company passed to his son Italo, who, driven by a great passion for expressing the potential of the Trentino territory, continued the tradition by pursuing a constant search for quality in wine production.

The same quest for quality and improvement is handed down to the third generation with his son Paolo, who, after completing his studies in oenology, devotes himself completely to wine production first and then to sparkling wine production.

Today it is two sisters, Donatella and Chiara, who follow with passion and determination the evolution of the family business focused on the production of Classic Method Trentodoc sparkling wines as the best expression of the terroir highly suited to sparkling wine production.
