What kind of wine it is
Romeo & Juliet Passione Sentimento Bianco by Pasqua is a still white wine with Indicazione Geografica Tipica from Veneto, an authentic expression of Garganega. This wine is the result of a brief drying of the grapes, followed by vinification in steel and partial ageing in oak barrels. The sensory profile opens with an intense bouquet of fresh citrus, apricot and peach, accompanied by a hint of almond. On the palate, the structure is rounded, characterised by a pleasant enveloping texture, light creamy notes and a persistent finish, ideal for pairing with mature cheeses, spicy Asian recipes and refined seafood courses or white meats.
Where it comes from
This white originates from the hills of Verona, in the Monte Calvarina vineyard, located on the eastern side of the production area. Here, the vines grow up to six hundred metres above sea level. The distinctive element is the basaltic volcanic rock soil, which shapes the wine by imparting a marked aromatic intensity. Pasqua’s work translates into a deep connection with the Verona region, delivering a clear flavour profile, defined, in the glass.
How it is produced
Production begins in mid-September: the bunches undergo a short drying period in the fruit loft, an ideal technique for concentrating natural sugars and aromas. After pressing, there is a skin maceration of twelve hours to extract greater structural complexity. Fermentation takes place in temperature-controlled steel tanks. To add breadth, part of the batch is aged for several months in French oak barrels. The creation of the final blend completes the production cycle, ensuring impeccable flavour balance.
