Description

What kind of wine is it

Pascal Doquet Champagne Grand Cru Le Mesnil Sur Oger Diapason Extra Brut is a Blanc de Blancs that expresses the absolute purity of Chardonnay. In the glass, it displays a straw yellow colour, animated by a fine and persistent perlage. On the nose, it offers a clear bouquet of yellow fruits, enriched with hints of dried fruit and delicate toasted notes. The palate is distinguished by its freshness and a pronounced mineral streak, remaining clean through to the long floral finish. This organic sparkling wine is ideal as an aperitif and pairs perfectly with shellfish, fish dishes and cheeses, served at a temperature of 6-8°C.

Where does it come from

This wine originates from the Grand Cru commune of Le Mesnil-sur-Oger, located in the heart of the renowned Côte des Blancs. This area of the Champagne region has historically been dedicated to the cultivation of Chardonnay, thanks to its excellent soil and climate conditions. The Pascal Doquet winery interprets this exceptional terroir with precision, managing the vineyards according to the principles of organic farming. The provenance from this terroir imparts a distinctive stylistic mark, where vibrant minerality becomes the backbone of a structured cuvée, capable of evolving elegantly over time.

How is it produced

Production follows the Traditional Method to the letter. Vinification begins with fermentation entrusted exclusively to indigenous yeasts, a fundamental choice to enhance the aromatic identity of the grape variety. The cuvée takes shape through a careful blend, then undergoes a slow secondary fermentation. The restrained dosage, which defines the Extra Brut style, ensures a dry and linear drink, highlighting the character of the wine without any superfluous additions. This artisanal approach results in a harmonious glass, characterised by freshness and a great clarity of flavour throughout.

History and Curiosities

Based in Vertus, the Pascal Doquet house signs this majestic organic Champagne Grand Cru, an authentic expression of the Le Mesnil-sur-Oger terroir. The Diapason is an excellent Blanc de Blancs made from Chardonnay grapes, the result of blending two vintages and fermented exclusively with indigenous yeasts. Expertly matured according to the traditional method, it offers a mineral sip with an extremely fine mousse and delicate aromas of dried fruit. The Extra Brut enhances its freshness, a quality praised with 92 points from Vinous.
