In the glass, it displays a straw yellow colour and a very fine perlage, accompanied by a delicate effervescence. On the nose, clear notes of citrus, ripe yellow fruit and hints of brioche emerge. This cuvée originates in Baslieux-sous-Châtillon, in the renowned Champagne region. The wine project reflects a deep respect for nature through strict biodynamic management of the plots. How it is produced
Vinification faithfully follows the principles of the Champenoise Method, favouring minimal intervention in the cellar. The prise de mousse takes place in the bottle using exclusively indigenous yeasts. The wine is then aged for at least 24 months on the lees, acquiring depth and structural complexity. The entire production cycle proceeds without racking or filtration, preserving the vital energy of the liquid. Finally, the technical choice of zero dosage preserves the purity of the grapes, resulting in a taut and highly pure sip.
