Description
What kind of wine is it
Parusso Barolo Perarmando is a still red wine from Piedmont made from Nebbiolo grapes. It appears a garnet red in the glass and offers a rich aromatic profile, characterised by distinct notes of spices and preserves. On the palate, it reveals a balanced structure, supported by ripe tannins that lead the sip towards a long aromatic persistence. This elegant expression pairs ideally with roasted red meats, truffle-based dishes, game, and mature cheeses.
Where does it come from
The grapes come from the municipality of Castiglione Falletto, specifically from the historic Mariondino vineyard. This renowned plot is situated at around 290 metres above sea level, with an optimal east and south-east exposure. The vines sink their roots into a marly sandstone soil, a type of terrain that gives the Nebbiolo a distinct identity and a pronounced territorial character. These pedoclimatic conditions favour the optimal development of the plants, ensuring the wine's complexity and remarkable longevity.
How is it produced
The vinification process, overseen by Parusso, begins with careful management of the extraction phase through strict temperature control and maceration times. Maturation then takes place in small oak barrels for twenty-four months, encouraging the integration of the wine's organoleptic profile. The process concludes with a patient bottle ageing of forty-two months at a constant temperature, a fundamental step in defining the finesse and elegance of this Barolo.
