What kind of wine it is

The Prefillossera by Palmento Costanzo is an organic red wine from the Etna area, capable of precisely expressing the volcano's unique character. This elegant and powerful blend is created from a union of Nerello Mascalese and Nerello Cappuccio grapes, offering a deep and rich sensory profile. On the nose, intense notes of red fruits emerge, intertwined with hints of graphite, volcanic dust and balsamic nuances. On the palate, it is enveloping and long, supported by velvety tannins that guide the sip towards a delicately savoury and persistent finish, a true liquid expression of its chosen terroir.

Where it comes from

The grapes come from the renowned Contrada Santo Spirito in Passopisciaro, located on the northern slope of Etna, within the Natural Park. The vineyards stretch at 750 metres above sea level on ancient terraces supported by classic dry-stone walls made of lava stone. In this extreme environment, the roots of century-old ungrafted vines run deep, cultivated using the traditional bush-trained system supported by chestnut stakes. The soil, characterised by alternating black and brown volcanic sands and effusive rocks, combined with high planting density and low yield per hectare, imparts a pronounced mineral identity and a precise flavour profile to the wine.

How it is produced

The production process begins in mid-October with a rigorous manual harvest, involving careful selection of the bunches directly on the vine to preserve the highest quality. In the winery, the transformation of the must takes place through fermentation activated by indigenous yeasts, accompanied by prolonged maceration inside rotating French oak barrels. After completing malolactic fermentation, the wine undergoes a slow maturation in oak for twenty-four months, followed by a further period of rest to harmonise the overall structure. This meticulous approach consolidates the aromatic depth and defines a technical profile designed to encourage significant evolution over time.

Palmento Costanzo is located in Contrada Santo Spirit, in the village of Passopisciaro, on the northern side side of Etna. Here, since time immemorial, the following are cultivated manually Nerello Mascalese, Nerello Cappuccio, Carricante and Catarratto. and Catarratto. Today we follow the principles of organic farming with the greatest respect respect for tradition.
