What kind of wine it is

Etna Rosso Nero di Sei by Palmento Costanzo is a Sicilian organic red wine with great character. This wine is produced from old, century-old vines capable of delivering a profound sip. On the palate, it reveals a velvety structure, supported by fine tannins and a long-lasting finish. Its complexity is defined through fermentation in truncated conical oak vats with indigenous yeasts and the completion of malolactic fermentation.

Where it comes from

The grapes are grown in Contrada Santo Spirito in Passopisciaro, on the northern slope of Etna. The vineyards are cultivated using the alberello method, supported by chestnut stakes, a system that ensures high fruit quality. The roots delve into volcanic sands rich in effusive rocks, a soil that imparts a pronounced structured character to the wine. The connection to the territory is clearly evident during tasting, where notes of volcanic ash blend with the mineral essence of the area.

How it is produced

The grapes are hand-picked in mid-October with a rigorous selection of bunches. This is followed by a lengthy ageing process of twenty-four months in large oak barrels, completed by a year of maturation in the bottle to harmonise the sensory profile. With its ruby red colour, the wine expresses a rich bouquet of ripe fruit and sweet spices, with hints of leather and mint. Its persistence makes it perfect for pairing with cured meats, aged cheeses and dishes based on beef, pork or lamb.

Palmento Costanzo is located in Contrada Santo Spirit, in the village of Passopisciaro, on the northern side side of Etna. Here, since time immemorial, the following are cultivated manually Nerello Mascalese, Nerello Cappuccio, Carricante and Catarratto. and Catarratto. Today we follow the principles of organic farming with the greatest respect respect for tradition.
