What type of wine it is
Etna Rosso Contrada Santo Spirito by Palmento Costanzo is an organic wine with a Controlled Designation of Origin, featuring a vibrant ruby red colour with elegant garnet nuances. Born from a harmonious blend of Nerello Mascalese and Nerello Cappuccio grapes, it represents a structured expression of Etna. The aromatic profile opens with notes of marasca cherries in alcohol, sour cherry, and tomato leaf, enhanced by spicy hints of black pepper and sweet tobacco. On the palate, it offers a velvety structure, supported by soft tannins and a pleasant savoury finish, completed by fermentation with indigenous yeasts and a long ageing in oak barrels.
Where it comes from
The grapes come from the northern slope of the volcano, specifically in the renowned area of Passopisciaro. Here, at an altitude between 720 and 780 metres, grow hundred-year-old vines cultivated with the classic bush-trained ('alberello') system on chestnut poles. The roots push deep into the volcanic sands, an alkaline soil rich in iron, stones, and effusive rocks. This specific geological conformation ensures low yields and gives the wine a precise mineral identity, outlining a well-defined flavour profile.
How it is produced
The manual harvest takes place at the end of October, with a careful selection of the best bunches directly on the vine. In the cellar, the action of indigenous yeasts triggers fermentation inside truncated-conical oak vats, followed by complete malolactic fermentation to stabilise and harmonise the taste. The long rest includes twenty-four months in egg-shaped French oak barrels and a further eighteen months in the bottle.
