What kind of wine it is
Contrada Santo Spirito Rosso by Palmento Costanzo is an organic red wine that embodies the essence of the Etna region. The result of a careful blend of Nerello Mascalese and Nerello Cappuccio grapes, it displays a vibrant ruby red colour with elegant garnet highlights. The bouquet is broad and deep, characterised by notes of marasca cherry in spirit, black cherry and tomato leaf, which blend with spicy hints of black pepper and sweet tobacco. On the palate, it reveals a velvety structure, well supported by soft tannins and delicate boisé notes from the long ageing process, offering a pleasantly savoury finish.
Where it comes from
This red wine is born in the vineyards of Contrada Santo Spirito, located on the northern slope of the volcano in the Passopisciaro area. The vines, which are up to a century old, are cultivated using the traditional alberello method on chestnut stakes at an altitude between 720 and 780 metres above sea level. The roots delve into deep volcanic sands, characterised by a strong presence of stones and effusive rocks. These soil components, alkaline in nature and rich in iron, give the wine a distinct mineral identity and a well-defined savoury profile, ensuring low yields that favour a faithful expression of the terroir.
How it is produced
The process begins at the end of October with a rigorous manual harvest, aimed at selecting the best bunches directly on the vine. In the cellar, fermentation takes place in truncated conical oak vats, triggered by the action of indigenous yeasts. After completing full malolactic fermentation to stabilise and harmonise the taste components, the wine embarks on a long maturation journey. Ageing continues for twenty-four months in French oak barrels with a distinctive ovoid shape, followed by a further eighteen months resting in the bottle, a crucial stage for integrating the wood notes and defining the overall elegance of the sip.
