What kind of wine is it
Etna Bianco Contrada Cavaliere by Palmento Costanzo is a still white Sicilian wine that embodies the essence of Etna. Made from Carricante grapes, it stands out for its dry and dynamic profile. The bouquet, intense and fragrant, reveals lively citrus notes, hints of Mediterranean scrub and flint. On the palate, it expresses itself with vibrant freshness, supported by a pronounced mineral character that perfectly balances the savouriness, making it ideal for pairing with fish dishes and cheeses.
Where does it come from
The grapes come from Contrada Cavaliere, located over a thousand metres above sea level on the slopes of the volcano. The vineyards, cultivated using the alberello system on chestnut stakes, preserve historic vines, including rare ungrafted centenarian stocks. The soil is characterised by volcanic sands, stones and fine matrices rich in organic matter. These specific pedoclimatic conditions give the grapes a profound energy and the typical saline component of the terroir.
How is it produced
Production begins with a manual harvest carried out at the end of September. The must, obtained from gentle pressing, ferments in steel with indigenous yeasts and undergoes full malolactic fermentation. This is followed by ageing on fine lees for four months in steel, aimed at amplifying the aromatic structure. A final rest of two months completes the process, delivering a sip that is agile, elegant and exceptionally smooth.
History and Curiosities
Located in the Etna Park, the Palmento Costanzo winery combines tradition and innovation, vinifying in an evocative lava stone palmento that has been restored and equipped with modern gravity-fed systems. At over a thousand metres above sea level, in Contrada Cavaliere, ancient Carricante vines grow, among which rare century-old ungrafted vines are preserved. This precious heritage, protected by UNESCO, gives rise to a wine of refined volcanic elegance, capable of winning over international critics with an excellent 91 points awarded by both Decanter and James Suckling.
