What kind of wine it is
Bianco di Sei by Palmento Costanzo is an organic white wine, a true expression of Etna Bianco. This refined blend combines Carricante and Catarratto grapes, presenting in the glass with a bright straw yellow colour. On the nose, it reveals a complex bouquet, characterised by notes of white flowers, lively citrus, honey and ginger, enriched by hints of aromatic herbs and subtle hydrocarbon nuances. On the palate, it is fresh and enveloping, with a pronounced mineral imprint and a savoury character that pleasantly prolongs its taste persistence.
Where it comes from
This wine originates in Contrada Santo Spirito, in the village of Passopisciaro, on the northern slope of Etna. The vines grow on striking lava stone terraces supported by dry stone walls, at an altitude between 650 and 780 metres. The volcanic soils are made up of nutrient-rich brown sands, formed by the slow decomposition of lava deposits. In this unique ecosystem, century-old pre-phylloxera bush-trained vines thrive, benefiting from the northern exposure to ensure a pure and crystalline territorial expression.
How it is produced
The production process begins at the end of September with a careful manual harvest. After gentle pressing, the must ferments in steel tanks using only indigenous yeasts, preserving the identity of the terroir. The wine then rests on fine lees for ten months, enriching its structural and aromatic texture. The process concludes with eight months of bottle ageing, a crucial step to harmoniously integrate the freshness and pronounced savoury note that characterise the sip.

On historic lava stone terraces, Palmento Costanzo practises organic and heroic agriculture, preserving invaluable pre-phylloxera vines that are over a century old and cultivated as bush vines. Suspended between 600 and 800 metres above sea level, these precious vineyards sink their roots into rich volcanic sands, offering a pure and vibrant expression of the land that combines a deep historical heritage with a rigorous respect for ancient winemaking traditions.
