What kind of wine it is
The Rosso del Soprano by Palari is a Sicilian wine with a dry and enveloping character, made from a blend of Nerello Mascalese, Nerello Cappuccio, Nero d’Avola and Nocera. It presents an intense ruby red colour in the glass, while on the nose it releases penetrating aromas of wild berries and jam. On the palate, it offers a long aftertaste of ripe fruit, making it the ideal companion for roast meats, game and mature cheeses.
Where it comes from
This wine originates from the Terre Siciliane region, from the hillside vineyards of Santo Stefano Briga overlooking the Strait of Messina. The south-east exposure ensures an excellent marine microclimate, with an altitude range from sea level up to four hundred and twenty metres. A rigorous selection of grapes, with very low yields per vine, allows the true essence of the territory to be extracted, giving the wine a clear expression and remarkable concentration.
How it is produced
The vinification process begins with a gentle pressing, followed by fermentation at a controlled temperature and maceration in steel. Maturation takes place in a balanced manner, with a period partly in steel and partly in small Tronçais oak barrels. At the end of the production cycle, ageing for at least eight months consolidates the structure and harmonises the aromatic profile before tasting.

In the eighteenth century Villa Geraci, home of the Palari, has resumed the production of this old wine with the aim of finding, with the help of modern techniques, the quality that made him famous.
Palari in the district, in S. Stefano Briga, lie the vineyards of the property, planted a sapling with native vines such Nerello, Nocera, Hood Tignolino, Core 'and Palumbo, Acitana, Galatena, Calabrese and others.
