Description
What kind of wine it is
Paladin Prosecco Dry Tondo is an organic sparkling wine distinguished by its silky smoothness. Made from Glera grapes, it displays a bright straw yellow colour. The extremely fine and persistent perlage precedes a delicate bouquet of wild apple, ripe pear and white flowers. On the palate, it reveals an elegantly sweet profile, perfectly balanced by a fresh acidity that finishes with a lively and savoury citrus note.
Where it comes from
This Prosecco originates from Annone Veneto, an area with a deep winemaking tradition. Produced by Paladin using a sustainable agricultural approach, its uniqueness comes from the Tondo selection, a varietal clone that develops small, sweet berries. This characteristic ensures an unmistakable structural roundness on the palate, expressing the identity of the region through a harmonious drinkability.
How it is produced
The process follows the Charmat method, with a secondary fermentation carried out at a controlled temperature to preserve the freshness of the aromas. Served chilled, between 6 and 8 °C, this sparkling wine proves to be an excellent aperitif. Its natural smoothness gracefully accompanies light starters and shellfish dishes, also making it an ideal pairing with fine pastries.
History and Curiosities
Born from the dedication of a family that, since 1962, has enhanced the Veneto region, Paladin Prosecco Dry Tondo DOC highlights the unique characteristics of the Glera Tondo clone. This particular selection is distinguished by the presence of small, very sweet grapes, which give the sip a silky smoothness. The meticulous secondary fermentation, carried out using the Charmat method at 13°C, ensures an extremely fine perlage, making this organic sparkling wine, crafted by oenologist Antonio Lucarelli, a masterpiece of harmony enclosed in its iconic round bottle.
