Wine Type

Valle Isarco Sylvaner Alte Reben Riserva is a still white wine by Pacher Hof, an authentic expression of Alto Adige. Bright yellow in colour, it reveals an aromatic profile defined by hints of peach, pear and melon. On the palate, this Sylvaner is dry and persistent, supported by an intense body that culminates in a marked savouriness and a distinctly mineral finish. Ageing in barrels enriches its structure without compromising its elegance, pairing perfectly with shellfish, fine fish such as turbot and sea bass, savoury first courses and selections of refined cheeses.

Origin

The grapes come from Varna, in the Novacella area, in the heart of the Isarco Valley. The vineyards are cultivated at an altitude of between 620 and 700 metres on morainic soils with a sandy-clay composition. This geology gives the wine a savoury character consistent with its gustatory rigour. The terroir enjoys a warm microclimate, mitigated by wide daily temperature ranges. These conditions favour optimal ripening of the bunches, outlining their aromatic precision and ensuring prolonged gustatory freshness.

Production process

Production follows an organic and sustainable approach, making the most of grapes harvested from old vines, capable of ensuring deep aromatic concentration. Manual harvesting allows for careful selection of the best fruit. The wine matures for eight months in oak barrels, a choice aimed at giving structure and complexity to the sip. The result is a glass with a dry profile that enhances the mineral vocation of the mountain territory, faithfully reflecting the winemaking identity of Novacella.
