Pacher Hof Valle Isarco Sylvaner Alte Reben Riserva is a still white wine produced by the Pacher Hof winery. This interpretation of Sylvaner Verde fully enhances the territory of Alto Adige Valle Isarco. In the glass, it displays a bright yellow colour, revealing delicate aromas of peach, pear and melon. On the palate, it is dry and persistent, supported by an intense body that culminates in a pronounced minerality. It pairs excellently with shellfish, fine fish such as turbot and sea bass, as well as selections of refined cheeses.
Where it comes from
The wine originates in Varna, in the Novacella area of the Valle Isarco. The vines are trained using the Guyot system at altitudes between 620 and 700 metres, rooted in sandy-clay moraine soils that impart a distinct savoury character. The warm microclimate, characterised by significant temperature variations between day and night, promotes the perfect ripening of the grapes, precisely defining the aromatic profile and preserving an intense freshness on the palate.
How it is produced
Production follows an organic and sustainable approach, using Sylvaner Verde grapes from vines over forty years old, which ensure a natural aromatic concentration. The rigorous manual harvest, carried out in mid-October, allows only the best bunches to be selected. The wine then undergoes eight months of ageing in oak barrels, a stage that enriches the structure without compromising its elegance, resulting in a dry wine deeply connected to its territory.
