What kind of wine it is

Ottin Canto X Chardonnay is a still white wine that purely expresses mountain Chardonnay. The aromatic profile opens with notes of sweet spices, flint and fragrant fruit, enriched by hints of gunpowder and white pepper. On the palate, it is dynamic, characterised by echoes of broom flowers, fern and moss. A pronounced savoury minerality supports a structured sip with a crystalline colour.

Where it comes from

The grapes come from the slopes of the Aosta Valley, situated at an altitude between 650 and 700 metres. The south-facing vineyards take root in moraine and sandy soils, which give the wine freshness and definition. Ottin practises rigorous mountain viticulture with carefully controlled yields. The name evokes the Tenth Canto of Dante's Inferno, recalling the historic purchase of these ecclesiastical lands, which cost the owner excommunication.

How it is produced

Production begins in mid-September with the manual harvest. In the winery, whole bunches are gently pressed, followed by fermentation with selected yeasts. The malolactic fermentation process gives harmony to the organoleptic profile. The Chardonnay then rests for a year on fine lees in French oak barrels, consolidating the palate's volume and structural balance.

The Ottin Canto X Chardonnay embodies the genuine dedication of Elio and Nicolas to the great white wines of the Aosta Valley. Produced by a historic family of mountain winemakers, this tenth label from the winery is expertly matured in oak tonneaux. The evocative name pays homage to Dante's Inferno, recalling the bold purchase of ecclesiastical lands made at the cost of excommunication. A glass of crystalline charm, capable of fully expressing the territory by blending a powerful and dynamic sip with elegant notes of sweet spices and mineral hints.

The Ottin winery originated from a passion. The passion of a young farmer for wine and his land. A passion from afar inherited from his family, mountain winegrowers for generations. Age-old knowledge and savoir-faire that Elio Ottin could interpret by creating his farm in the early 1990s after studying at the Institut Agricole Régional and the Agricultural Institute of Verzuolo. An agricultural technician at the Agricultural Department of the Autonomous Region of Valle d'Aosta, he left public employment at the end of the 1990s to devote himself entirely to his passion and company. In 2007 he took on a new challenge: he decided to make his wine from grapes that until then had been given to a local cooperative.

Thus Ottin wines were born. Wines of great personality, produced mainly from indigenous vines, cultivated in areas naturally suited to viticulture, where the vine thrives with balance, according to environmentally friendly production techniques.
