The sparkling process is carried out using the Charmat Method, a technique that preserves the varietal fragrance of the fruit. On the palate, the sip is intense and velvety, supported by lively acidity and a savoury finish, enriched with hints of peach and white-fleshed fruit.
Where it comes from
This Valdobbiadene Prosecco Superiore originates from the historic Col del Vent vineyard, in the heart of the region. The grapes come from century-old vines rooted in fluvio-glacial soils, which give the wine a particular expressive precision. The connection with the land emerges in an aromatic bouquet where notes of wisteria, rose, pear and lime can be recognised, accompanied by subtle hints of aromatic herbs. To fully enjoy its linear structure, it is recommended to serve it chilled, ideally between 6 and 8 °C, paired with shellfish or vegetable risottos.
How it is produced
Production begins with the destemming and cooling of the Glera must, followed by fermentation in stainless steel tanks. A prolonged contact with the lees enriches the structure of the wine before the secondary fermentation in autoclave. This process enhances the primary aromas and gives this Extra Brut a crisp and dynamic character. Tasting reveals a silky carbonic texture and ends with a pleasant saline finish, making it perfect to accompany convivial occasions and fish-based dishes.
